Med en konstant temperatur på cirka otte grader og med en luftfugtighed tæt på 98 procent skaber kalkgruberne ideelle betingelser for ostelagring. Ostene får tillige en smagsudvikling, der ikke umiddelbart kan skabes under normale lagringsforhold.
Siden 1992 har Mejeriet Dybbækdal lagret oste i Daubjerg Kalkgruber, nemlig Danbo-typen “Jens Langkniv”, der fremstilles i forholdsvis små tal på grund af kalkgrubens beskedne pladsforhold.
I 2020 overtog Thise Mejeri produktionen og gjorde dermed denne lækre ost økologisk
